Job Description:
Adobo Nation is a Filipino grocery + restaurant hybrid (grocerant) serving Fort McMurray’s growing multicultural community. We are seeking a skilled Industrial Butcher to prepare traditional Filipino-style meats for our restaurant kitchen, frozen grocery retail section, catering services, and Pasalove deliveries.
Main Duties:
•Cut, trim, debone, and portion pork, beef, chicken, and goat meat according to traditional Filipino cooking styles
•Marinate meats for tapa, tocino, BBQ skewers, lechon belly, chorizo, and inasal dishes using authentic recipes and curing methods
•Weigh, vacuum-pack, label, and store ready-to-cook meats for retail freezer sale
•Prepare special meat cuts for buffet and catering orders.
•Operate knives, cleavers, band saws, slicers, vacuum sealers, digital weighing scales, and other meat-processing equipment
•Maintain daily freezer inventory using FIFO rotation system and production logs
•Clean, sanitize, and maintain all tools, prep tables, equipment, and work areas according to HACCP and food safety standards
•Follow workplace health and safety rules to ensure proper meat handling and storage
Equipment and Machinery:
•Knives, cleavers, sharpening steels
•Band saws and meat slicers
•Vacuum sealing machines and food-grade packaging tools
•Digital weighing scales and labelling machines
•Cold storage carts, blast freezer, and commercial walk-in freezers
•Stainless steel marination containers and prep tables
Work Conditions and Physical Capabilities:
•Fast-paced, high-volume meat processing environment
•Manual dexterity and good hand-eye coordination are required
•Standing for long periods, frequent bending, crouching, and kneeling
•Handling heavy loads (up to 60 lbs) regularly
•Working in cold environments (0°C to -18°C)
•Attention to detail and ability to meet batch production targets
